This is the easiest banana bread ever and truly exceptional in taste. It is sweet, very moist and loaded with nutrients from spelt flour and the bananas. Fast and easy, after only 10 minutes of preparation time, it is ready for the oven!
1 ½ cups of organic spelt flour
1 teaspoon of baking powder
1 teaspoon of baking soda
4 ounces of butter, melted
1 cup of light brown sugar
2 eggs, lightly beaten
3 ripe bananas, mashed with fork
½ cup of buttermilk
Preheat oven to 350 degrees Fahrenheit. Grease a medium loaf pan with butter, and cover it with parchment paper, leaving 2 inches of paper to overhang on both sides of the pan (this will help to remove bread from the pan). Next, grease the parchment paper.
To make the batter: simply place all the ingredients into the bowl of a food processor,
pulse several times until all ingredients are combined and batter is formed. Be careful not to over process.
Now you are ready to pour the batter into the prepared loaf pan, place it into preheated oven and bake for 55 to 60 minutes.
Remove bread from the oven and let it cool in the pan for 10 minutes,
then remove from the pan and cool completely before cutting and serving.
This recipe will make about 8 to 10 servings.
Prep time: 10 minutes.
Bake time: 55 to 60 minutes.
