This dish can be served for breakfast or as a dessert. It is delicious served with yogurt, or on the top of the oatmeal, as well as with ice-cream or whipped cream. Years ago, when I first started making this apple bake my youngest son ate two servings of this and told me it was amazingly good. My kids are almost grown now and still enjoy eating it. It is a cooking marvel to find something this healthy that kids of any age will enjoy.
2 cups cranberries, fresh or frozen
4 Granny Smith apples, peeled, cored and thinly sliced
1 teaspoon of cinnamon
½ teaspoon of nutmeg
½ cup of brown sugar
2 tablespoons of white whole wheat flour
For the topping
1 cup old-fashioned oatmeal
1/4 cup of white whole wheat flour
1/4 cup brown sugar
1/4 cup avocado oil
Preheat oven to 375 degrees Fahrenheit.
In a mixing bowl, combine cranberries, apples, cinnamon, nutmeg, brown sugar, and two tablespoons of flour. In another bowl mix together oatmeal, sugar, oil and whole wheat flour.
Pour apple mixture into a large baking dish. In this recipe, I used a 12 x 9 oval baking dish.
Sprinkle oatmeal mixture over the apple and cranberry mixture. Bake on 375 degrees Fahrenheit for 30 minutes.
Prep time 20 minutes
Bake time 30 minutes
