Here is one more recipe using peanut butter sauce. This time I used a little different approach, sautéing vegetables and chicken pieces, and then tossing with the sauce and serving with your favorite pasta or rice.

- 1 tablespoon of olive oil
- 1 pound of chicken breast, cut into small pieces
- 1 small red bell pepper, thinly sliced
- 1 cup of green onion, sliced
- 1 cup of spinach
- ½ cup of chopped cilantro for garnish
- 4 cups of cooked pasta for serving
Prepare peanut butter sauce in accordance with the recipe at this link: http://www.smellofrosemary.com/2017/02/01/creamy-peanut-butter-sauce/ .
To make the remainder of this recipe, heat olive oil in a large skillet over medium-high heat; then add chicken and sauté for about 5 to 6 minutes, until chicken is no longer pink. Remove chicken from the skillet and set aside.
Add bell pepper and green onion to the skillet and sauté for 3 more minutes.
Add peanut sauce, chicken and spinach, reduce heat to medium and continue cooking for another 2 to 3 minutes until chicken is cooked throughout and spinach wilts.
Serve over cooked pasta.
