This is a last minute idea for Valentine’s Day. Indulge your loved ones and yourself with these easy to make and delish chocolaty candy with pumpkin seeds and dried cranberries. Feel free to experiment – use any other kind of dried fruits, different kind of chocolate and different seeds or nuts. It is all up to you. The only difficulty in this recipe is how to melt the chocolate properly, so when it has hardened it is still nice and shiny, without a grayish and cloudy appearance, which often happens when the temperature is too high.

Ingredients

  • 2 bars of dark chocolate, 3 ½ ounces each, chopped
  • 1/3 cup of dried cranberries, chopped
  • 1/3 cup of pumpkin seeds

So, let’s get started!

Bring a medium pot filed with 1 inch of water to boil. Turn heat to low and let the water just simmer. Place chocolate in a big enough bowl to fit over the simmering water, but not touching the water.

Let it sit for about 1 minute to 2 minutes. Carefully remove the pot along with the bowl from the heat, and let chocolate melt slowly, occasionally mixing gently, with a rubber or silicon spatula. Let it sit until the chocolate has melted completely.

Pour chocolate on the working surface covered with parchment paper. Sprinkle with cranberries and pumpkin seeds. Using a large knife, press the cranberries and seeds into the chocolate.

Using a knife, shape the chocolate into a rectangle, and let it rest for about an hour, it needs to be completely hardened before cutting.

You can use a sharp cookie cutter to cut out small chocolate hearts, or simply cut chocolate into 1 inch squares.
