Broiled Shrimp and Broccoli with Peanut Sauce

This is what is called a ‘One sheet dinner’.  These are basically the easiest meals that can be prepared. Simply place all ingredients on one baking sheet and bake all on one temperature for the designated times, and you are only minutes from a homemade, delicious and healthy dinner.

Ingredients

Heat broiler on high and position a rack about 6 inches from the heating element.

Line a large baking sheet with aluminum foil. Toss broccoli florets with olive oil, and place in a single layer, season with salt and pepper. Broil for 3 minutes.

Mix shrimp with ¼ cup of peanut sauce.

Evenly arrange shrimp around broccoli, and broil for another 3 to 5 minutes, until broccoli softens and chars a bit on the edges and shrimp is just done.

Serve shrimp and broccoli over freshly steamed rice or pasta with remaining peanut sauce.

Cooking time: 6 to 8 minutes, depends on the size of the shrimp

Prep time 10 minutes

Total time: 16 to 18 minutes
