This lovely, healthy smoothie has been a part of my diet for a while now. It has become my breakfast/lunch routine. Tofu and soy milk provides a generous amount of protein and vitamin D and the strawberries are full of vitamin C. I find using frozen fruits very handy, I always keep some in my freezer. Adding the basil to this simple recipe makes it taste fresh and delicious. You can also add honey for a little extra sweetness, if you like.
1 ½ cup of frozen strawberries
½ cup of silken tofu
1 cup of soy milk
1 to 2 fresh basil leaves, or fresh mint
1 tablespoon of honey (optional)
Place frozen strawberries, tofu, soy milk, and basil or mint leaves in a blender. Process all ingredients on high speed for 1 to 2 minutes, or until well blended. Pour into a 16 ounces glass and enjoy.
