Lean turkey and the combination of fresh herbs, spices and roasted tomatoes make it a delicious and reduced-fat alternative to a traditional burger.
¼ teaspoon hot pepper flakes
½ teaspoon of salt
¼ teaspoon black pepper
1 tablespoon of olive oil or as needed to sauté turkey patties
2 cups assorted cherry tomatoes cut in half
1 tablespoon chopped fresh rosemary
1 garlic clove minced
1 tablespoon olive oil for roasted tomatoes

4 whole wheat buns

Preheat oven to 425 degrees Fahrenheit.
In a large mixing bowl, using the palms of your hands, thoroughly mix together the ground turkey, egg, fresh parsley and chives, hot pepper flakes, salt and black pepper.
Divide the turkey mixture into four equal parts, and form patties. Preheat olive oil in a large frying pan on medium-high heat, and sauté patties until they are well done, about 5 to 6 minutes per side.
In the meantime, while the turkey patties are cooking, toss cherry tomatoes with garlic, chopped rosemary and olive oil.
Roast tomatoes in the oven, for about 10 minutes, or until they are softened and charred a little bit.
To assemble, spread a generous amount of tofu mayonnaise on the top or bottom portion of the bun, top with a leaf of lettuce, and then with the herb turkey patty. Place ¼ of the roasted cherry tomatoes on top of the patty. Top the burger with the other half of the bun.
