Cream Puffs and Berries - Smell of Rosemary.

Hey!  I hope you had a great Easter with family and friends.
 
I’m glad you are visiting my blog, and I know you’ll love these yummy cream puffs with berries.  When I serve these at parties, people comment that they look difficult to make, but, really, they are quite easy to make and yet have a refined look and taste to them.

Ingredients
¼ cup of whole milk
¼ cup of water
1 stick of unsalted butter
½ teaspoon salt
½ cup of all-purpose flour
2 large eggs
1 cup heavy cream
1 teaspoon of vanilla extract
2 tablespoons of powdered sugar

Preheat oven to 400 degrees Fahrenheit.

In a medium saucepan, on medium-high heat, bring milk, water and butter to boil. Remove from heat, and stir in flour. Return to heat, and cook for about 4 minutes, mixing constantly with wooden spoon. The mixture will be very thick, and should pull away from walls of the pan.

Transfer this mixture to a stand mixer, fitted with a paddle attachment, and mix on low speed for 1 minutes, to cool a little bit. Add eggs, one at the time, mixing after each addition, until well incorporated into the batter.

Line 2 baking sheets with parchment paper. Draw small circles, to use them as a guide for piping the puffs.

Transfer dough into a pastry bag fitted with ½ inch tip. Pipe puffs into prepared cookie sheet (number of puffs will vary from size of the puff; I was able to make 15 puffs).

Bake puffs for about 20 to 25 minutes, until they rise, and golden brown in color. Let puffs cool on wire rack.

To make vanilla cream, add heavy whipping cream, sugar and vanilla extract to a clean stand mixer bowl, and mix on low, until combined, for about 30 seconds. Increase speed to medium-high, and whisk until soft peaks form.

Cut puffs horizontally, spoon some whipped cream into each puff, and serve with your favorite berries.
