Oatmeal Banana Bread


Oatmeal Banana Bread - Smell of Rosemary

Banana bread is a common breakfast and snack food in our home and when you try this recipe, it will be in yours as well. My husband and I love it with our coffee, and our kids love it with a cup of milk as an after-school snack. It is rare to find a kid-friendly food that is also healthy.

Bake this bread and take it over to a girlfriend’s house- have a good time eating, drinking coffee and talking.   



1½ cups all-purpose flour
2/3 cup sugar
1½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
¾ cup old fashion oats
3 mashed bananas 
½ cup low-fat buttermilk
5 tablespoons melted butter
1 teaspoon vanilla extract
3 large eggs, lightly beaten 


Preheat oven to 350 degrees F.


In a large bowl combine flour, sugar, baking powder, baking soda, and salt. Stir well with a whisk. Add oats and stir. 


In a medium bowl combine mashed bananas, buttermilk, eggs, oil, and vanilla.  


Add to the flour mixture, and mix until just moist. 

Spoon batter into 8 x 4-inch loaf pan lightly coated with oil. Bake at 350 F for 55 minutes, or until a wooden toothpick inserted in the center comes out clean.   

Cool 15 minutes in pan on the wire rack. Remove from pan. Cool completely on wire rack.
This recipe will make 12 servings.

    I just made this and it came out great! I divided mine into 4 mini loaves and baked them for about 30 minutes. They didn't brown on top as nice as your loaf did. I also only used 2 bananas instead of three. Came out great! Thanks for the recipe, it's a keeper.
